DIGGING OUT AND KEEPING FOR THE WINTER

When the first frost bites the leaves they should be cut off with a sharp knife 4-6 inches above the ground. The roots should be dug out and gently shaken off from too much soil. Roots should be placed in cool place 40-50 F (4 - 10 oC). They don't demand daylight. To protect roots from drying out they should be covered with wet peat or sawdust. The roots should be inspected from time to time. If parts of them begin voting they should be eliminated.
